I made this exactly as Smitten Kitchen directs. But with bigger pieces, so I should have roasted the squash for longer. The chickpeas combined with the tahini dressing made it a bit like deconstructed hummus with squash but I see that as a good thing. I used some left over dressing with falalfel the following day.
18saughtonmains and I loved it, the kids were unconvinced, sadly. So the search for vegetarian meals the kids like continues. The adults enjoyed leftovers cold for lunch the next day.
