Apple Cake

This recipe is one of the blessed few that doesn’t require any tweaking to be milk free. It’s naturally just apples, eggs, sugar, flour and some vanilla essence. Elder kid helped with most of this recipe – she peeled apples, ran the mixer and folded in flour.  I suspect I should have pushed the batter down even more so the apple actually pokes out the top of the cake. But it still works.

Recipe from Smitten Kitchen Sorry for not using a more specific link but my laptop is currently drying out after a certain toddler and some water were left in the same room without adult supervision. Now I’m off to eat Apple Cake to help me feel more optimistic about its long term chances.
