Despite making this lunch 3 times this week, I have completely failed to take any photos of it. Still, it is simple and tasty and quick, which is the ideal hot lunch combination.
Make the same pizza dough as for Manakish bi Za’atar, and after you’ve left it about an hour, divide into 10 pieces and after a short rest roll them out into hand sized pieces. The more leaving to rest you can manage the better, but if you are in a hurry, don’t bother. Spread a small amount of this pizza sauce over the top and then either cook it as is or add some more topping – I’ve used some elderly red pepper, some red onions, mushrooms. Cook in 250C oven for 10 minutes. If you fancy it, put a piece of serrano ham on as soon as it comes out of the oven and the residual heat will lightly cook the ham.
One of these does our youngest and 2 to 3 are enough for me. You can either keep the dough in the fridge for a day or so or cook all 10 and have them cold later.
