Gâteau Basque

This is the sort of cake you eat with a mug of strong coffee – sweet, dense and filling, it’s not pretty cooking but it is tasty.

The recipe comes from Joe Pastry and as the only change needed to make it milk free is replacing the butter with margarine,  I’m not going to rewrite his recipe.  I used blackcurrant jam instead of cherry compote because that’s what I had handy, but I am planning to make it again with the black cherries when I have the chance.  Also, while you’re over there, look through the archives – Joe is a great writer about baking – I want to make everything.
