Snapshot: Enriched Soup

I’ve been struggling with eating enough fat recently, so this is my attempt to enrich a shop bought soup[1] with pumpkin seeds and flaked almonds. It worked pretty well and is more interesting to eat than just splashing olive oil over everything.

[1]labels have to be read carefully to avoid milk, but some carton soups don’t – this is butternut squash so doesn’t need thickening with cream.

    I bought those almonds to make rice with raisins, almonds and coconut, so pls. don’t eat them all.

      Yum. You could use the posting access I’ve given you to post the recipe, you know :) but fret not, still plenty left.

        I’ll make a rice recipe from Veggiestan over the weekend & blog about it. Either the above rice dish, or rice and potatoes and dill.
