Snapshot: Plaited Bread

I’m off in Rosslare and the other afternoon I was in the holiday home with the kids and I decided to have some fun with my default bread. The kids helped with the kneading and later I shaped the bread while the tour de france was finishing. I love the outcome, further proof that practice is paying for me.

To make this, use my standard bread dough, leave to rise for about 90 minutes, shape by rolling into 3 sausages, braid them together. Leave to prove for an hour, cover with an egg wash and scatter with sesame seeds. Put in a 220 degree oven and turn down to 200 after 10 minutes. Cook for another 20 to 25 minutes.
